Artichokes (Jerusalem)

These are grown just like Potatoes but with no earthing up needed.

They can be grown as a perennial crop but as they are very invasive, it is better to lift them each year and treat them as an annual.

They are planted in March in a rich soil and are harvested from October and in the spring. Any smaller tubers can be used as seed stock and replanted.

Some of the newer varieties such as 'Fuseau' are better as they are smoother skinned which makes peeling a lot easier.
