Fennel

(Foeniculum vulgare)

A tall perennial that grows to 5ft (1.5m). It has feathery foliage and yellow flowers. It will grow on any soil in shade or full sun. Do not plant near dill. Sow seeds in spring. Cut the plant down to 4" (10cm) above ground level in the autumn.

Harvesting

Pick the leaves as required. Gather flower heads in autumn before they are completely dry and place on paper in a dry airy place to finish ripening the seeds. When completely dry shake out the seeds and store.

Uses

Used in cooking to flavour fish, soups and sauces. Can also be used in salads.


Fenugreek

(Trigonella foenum-graecum)

A hardy annual that grows to 2ft (60cm). It is usually grown for its seeds and leaves. The flowers, heavily scented and cream in colour turn into seedpods. It needs a sunny well-drained position. Sow seeds in spring when all danger of frost is past.

Harvesting

Pick the leaves as required. To gather the seeds, cut the plant down after the pods have turned brown and continue to dry in an airy place. When completely dry, take out the seeds and store.

Uses

The seeds are usually lightly roasted and ground and then used in curry, pickles and chutneys. The leaves can be used in salads.
